Burrata Caprese Salad

This is a summer staple in our house. Walt and I especially love it for a quick dinner on a summer night. You can also use fresh mozzarella in place of the burrata.

Burrata Caprese Salad

Serves 2- 4

Ingredients

2, 4 ounce Burrata Balls

6 ounces cherry tomatoes, sliced

2 ounces fresh basil, chopped

1 - 2 tablespoons olive oil

1 tablespoon balsamic vinegar or balsamic glaze

1/2 teaspoon salt

1/4 teaspoon pepper

Remove Burrata from water and drain on a paper towel for 2-3 minutes.

Assemble Burrata on a plate with tomatoes around and basil sprinkled on top.

Lightly pour the Olive oil and balsamic glaze on top. Then salt and pepper to taste.

Serve immediately.
