Chicken Ceasar Pasta
This year I have worked earnestly to have good, nutritious, and satisfying food available for our family. This recipe became a staple around here. You can grab a grocery store rotisserie chicken to make this as those usually yield about 4 cups of meat. It keeps well in the fridge. You may want to add a bit more dressing if it sits in the refrigerator overnight. It goes well in a wrap also. Can be served cold, room temp, or warmed up.
Serves 6-8
Ingredients
4 Cups chicken, cooked and slightly shredded
8 ounces pasta, cooked
2 ounces caesar dressing
2-4 ounces Parmesan cheese, shredded
1 ounce lemon juice
2 cups spinach
1/8 teaspoon pepper
Combine the chicken, pasta, dressing, and lemon juice in a bowl.
Spoon over spinach and season with pepper.
Serve immediately. Will keep in an air tight container for 2-3 days.
